Cinnamon Roll Pancakes

Ingredients
  

  • 1 ½ cups 190g all-purpose flour
  • 2 tablespoons 25g granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Cinnamon Roll Filling:
  • 3 tablespoons 45g melted butter
  • 1/3 cup 65g brown sugar, packed
  • 1 tablespoon ground cinnamon
  • Cream Cheese Glaze:
  • 4 oz 115g cream cheese, softened
  • 1 cup 120g powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk adjust for desired consistency

Instructions
 

  • Step 1: Prepare the Cinnamon Roll Filling
  • In a small bowl, combine the melted butter, brown sugar, and cinnamon. Mix them together until smooth and well-combined. This sweet cinnamon filling will create the signature swirl in your pancakes. Set it aside for now.
  • Step 2: Make the Pancake Batter
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. In a separate bowl, beat an egg and then add the milk and melted butter. Combine the wet ingredients with the dry ingredients and gently stir until everything is just mixed. Be careful not to overmix—some lumps in the batter are perfectly fine. Your pancake batter should be thick yet pourable.
  • Step 3: Cook the Pancakes
  • Preheat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil. For each pancake, spoon about ¼ cup of batter onto the skillet. Let the pancake cook for 2-3 minutes or until you see small bubbles forming on the surface. Flip the pancake and cook for another 1-2 minutes until both sides are golden brown and cooked through.
  • Step 4: Add the Cinnamon Roll Swirl
  • Once the pancakes are cooked, it’s time to add the cinnamon roll swirl. While the pancakes are still on the griddle, drizzle the cinnamon filling over the pancakes in a swirl pattern. Use a knife or a toothpick to gently swirl the filling into the batter, being careful not to deflate the pancake.
  • Step 5: Drizzle with Cream Cheese Glaze
  • Finally, drizzle your homemade cream cheese glaze over the cooked pancakes. You can adjust the consistency of the glaze by adding more milk if you prefer it thinner. The glaze will melt into the warm pancakes, adding a sweet, tangy finish that takes the dish to the next level.
