Step 1: Mash the Bananas
In a large bowl, mash the ripe bananas with a fork. Keep some small chunks for a little texture.
Step 2: Mix Wet Ingredients Together
Add the egg, milk, melted butter, and vanilla to the mashed bananas. Whisk until everything is fully mixed.
Step 3: Whisk Dry Ingredients Separately
In another bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir them well.
Step 4: Combine Wet and Dry Mixtures
Pour the dry ingredients into the wet mixture. Gently stir until just combined. It's okay if the batter has a few small lumps. Overmixing will make your pancakes tough.
Step 5: Cook the Pancakes
Heat a nonstick skillet over medium heat. Lightly grease it with butter or oil. Pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2–3 minutes. Flip and cook the other side until golden.
Step 6: Serve Warm and Enjoy
Stack the pancakes high, add your favorite toppings, and enjoy them while they’re hot and fluffy.
