Strawberry Shortcake Cheesecake Rolls
- For the Cheesecake Filling:
- 8 oz 225g cream cheese, softened
- 1/2 cup 120g powdered sugar
- 1 tsp vanilla extract
- 1 cup 240ml heavy whipping cream
- 1 tbsp lemon juice
- 1/2 tsp lemon zest optional, but adds a nice fresh note
- For the Shortcake Roll:
- 1 1/2 cups 190g all-purpose flour
- 2 tbsp 30g granulated sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup 115g cold butter, cubed
- 2/3 cup 160ml buttermilk
- 1 tsp vanilla extract
